There are multiple solution sets; I think you need to define your requirements a bit more. For example, is the Polycom output audio loud enough for the room, and you just need a couple of remote wireless mics? If you're using Skype, how does the Polycom phone come into play with your laptop? Calling in on the Polycom and using the laptop for Skype video and screen sharing? For video there are a variety of camera offerings that mostly depend on the type of interface you want to use. Logitech has many types of USB cameras that work pretty well in fixed positions.

For your new rooms you should definitely scope out requirements and nice-to-haves in terms of audio, video, services and wired/wireless. I highly recommend you talk with inside sales or schedule a visit with a field sales engineer. Your guy in the Chicago area is well-versed in audio-visual installations and can really help define your equipment set and services, and perhaps a couple of integrators to check out.
